Extend mode gives your current Mac more workspace. Mirror mode is different: it brings the other Mac to your current screen, so you can interact with that Mac directly.

That makes Mirror useful for a Mac mini without a monitor, an iMac whose display is unavailable, or any local setup where moving to the other Mac is inconvenient.
